Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 4 cloves minced garlic
  • 1 tbsp chopped fresh parsley (flat-leaf preferred)
  • 1 tbsp chopped fresh thyme
  • 1 tsp dried oregano
  • 1 tsp salt (sea salt recommended)
  • 1/2 tsp freshly ground black pepper

Method
 

  1. Combine olive oil, lemon juice, zest, and garlic in a mixing bowl
  2. Stir in parsley, thyme, oregano, salt, and pepper until fully blended
  3. Place chicken in a shallow dish or ziplock bag and flatten to distribute evenly
  4. Pour marinade over chicken, flip breasts to coat both sides
  5. Preheat grill to 375°F (190°C) and brush grates with oil
  6. Grill chicken 4-5 minutes per side until golden and juices run clear
  7. Transfer chicken to a cutting board, tent with foil, and let rest for 8 minutes before slicing
