Ingredients
  

  • 1/2 cup all-purpose flour (or cornstarch for gluten-free)
  • 1/4 cup white wine (or non-alcoholic grape juice)
  • 3/4 cup heavy cream (or coconut milk for vegan)
  • 6 chicken thighs
  • Salt and pepper
  • Garlic, minced
  • Fresh herbs (such as thyme, parsley, and optionally basil)
  • Lemon, juiced and zested
  • Butter or olive oil for cooking

Method
 

  1. Season flour in a shallow bowl with salt and pepper.
  2. Heat a skillet or oven-safe pan over medium-high heat until it shimmers with oil.
  3. Dredge chicken thighs in the flour mixture and set aside any excess.
  4. Cook chicken in the pan, in batches if needed, for 4-6 minutes per side until golden and crispy.
  5. Deglaze the pan with wine, scraping up any browned bits from the bottom.
  6. Add minced garlic, herbs, lemon zest and juice, and cream (or coconut milk). Stir well.
  7. Simmer for 2-3 minutes until the sauce thickens.
  8. Adjust seasonings as needed, then return the chicken to the pan to heat through for 1-2 minutes.
  9. Transfer to a serving platter and let rest for 10 minutes before serving.

Notes

For best results, use a thermometer to ensure the chicken reaches 165°F (74°C).
Press chicken into the pan for 30 seconds after searing for a crispier crust.
Add basil at the end to preserve its delicate flavor.
Let the chicken rest before refrigerating to help retain moisture.
