- Season flour in a shallow bowl with salt and pepper.
- Heat a skillet or oven-safe pan over medium-high heat until it shimmers with oil.
- Dredge chicken thighs in the flour mixture and set aside any excess.
- Cook chicken in the pan, in batches if needed, for 4-6 minutes per side until golden and crispy.
- Deglaze the pan with wine, scraping up any browned bits from the bottom.
- Add minced garlic, herbs, lemon zest and juice, and cream (or coconut milk). Stir well.
- Simmer for 2-3 minutes until the sauce thickens.
- Adjust seasonings as needed, then return the chicken to the pan to heat through for 1-2 minutes.
- Transfer to a serving platter and let rest for 10 minutes before serving.
Notes
For best results, use a thermometer to ensure the chicken reaches 165°F (74°C).
