  • 1 tbsp butter, salted
  • 2 cloves minced garlic
  • 1 cup chicken broth
  • 2 tbsp fresh lemon juice
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 16 oz potato gnocchi
  • 2 cups baby spinach
  • Fresh thyme (optional) for garnish

Method
 

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken with garlic powder and lemon pepper seasoning.
  3. Cook chicken in 6-minute batches until golden brown (reserve pan for sauce).
  4. Push chicken to one side, melt butter, and sauté garlic for 1 minute.
  5. Add broth, lemon juice, and cream, stirring to combine.
  6. Add gnocchi and spinach, simmering 8-10 minutes until tender and sauce thickens.
  7. Stir in parmesan until melted. Adjust seasoning with salt/pepper if needed.
  8. Serve garnished with fresh thyme.
