Ingredients
  

  • Ground beef (1 pound, lean or substitute ground chicken/turkey)
  • Brown sugar (¼ cup, packed; demerara/light brown preferred)
  • Reduced sodium soy sauce (¼ cup; swap tamari for gluten-free)
  • Vegetable oil (1 tablespoon; peanut or sesame oil for nuttiness)
  • Garlic (3 cloves, minced; fresh preferred)
  • Green onions (2, thinly sliced; Korean scallions ideal)
  • Sesame oil (1 teaspoon for aromatic depth)
  • Red pepper flakes (1 teaspoon; adjust to taste)
  • Fresh ginger (1 teaspoon, grated)

Method
 

  1. Whisk brown sugar, soy sauce, sesame oil, red pepper flakes, and ginger in a bowl until combined
  2. Heat 1 tablespoon oil in a cast iron skillet over medium-high heat. Sauté garlic 1 minute until fragrant
  3. Add ground beef, breaking into ¼-inch pieces. Brown 3-5 minutes, drain fat, and reserve crispy bits
  4. Pour in sauce and 2/3 sliced green onions. Stir for 2 minutes, then simmer uncovered until thickened (3-5 minutes)
  5. Serve over rice, noodles, or quinoa. Top with reserved crispy bits, remaining green onions, and toasted sesame seeds

Notes

For dietary flexibility: tofu can replace beef (see article context). Substitute vegetable oil for added nuttiness. Adjust red pepper flakes to control heat. Save crispy meat bits for extra texture. Add roasted broccoli or Korean pear slaw for contrast
