- Preheat your air fryer to 400°F for ten minutes to ensure optimal temperature.
- Trim excess fat from chicken breasts and slice into uniform 1-inch chunks.
- In a large bowl, whisk the eggs with smoked paprika, garlic powder, onion powder, black pepper, and kosher salt until well combined.
- Dip each chicken piece into the egg mixture until fully coated.
- Transfer the chicken to a dish with panko breadcrumbs, pressing down gently to ensure the crumbs adhere well.
- Lightly spray the air fryer basket with oil and arrange the nuggets in a single layer without overcrowding.
- Cook for 15 minutes, turning halfway through, or until the chicken is cooked through and the panko is golden brown.
Notes
You can use gluten-free panko if needed. These nuggets are excellent for meal prep and store well in the refrigerator for up to 3 days. To reheat, place them back in the air fryer for 3-5 minutes to restore the original crunch.
