  • 3 chicken breasts, boneless and skinless, cut into 1-inch chunks
  • 2 large eggs, whisked
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp black pepper
  • 1 tsp kosher salt
  • 3 oz panko breadcrumbs
  • Cooking oil spray as needed

Method
 

  1. Preheat your air fryer to 400°F for ten minutes to ensure optimal temperature.
  2. Trim excess fat from chicken breasts and slice into uniform 1-inch chunks.
  3. In a large bowl, whisk the eggs with smoked paprika, garlic powder, onion powder, black pepper, and kosher salt until well combined.
  4. Dip each chicken piece into the egg mixture until fully coated.
  5. Transfer the chicken to a dish with panko breadcrumbs, pressing down gently to ensure the crumbs adhere well.
  6. Lightly spray the air fryer basket with oil and arrange the nuggets in a single layer without overcrowding.
  7. Cook for 15 minutes, turning halfway through, or until the chicken is cooked through and the panko is golden brown.

Notes

You can use gluten-free panko if needed. These nuggets are excellent for meal prep and store well in the refrigerator for up to 3 days. To reheat, place them back in the air fryer for 3-5 minutes to restore the original crunch.
