Ingredients
  

  • 1 lb ground chicken
  • 2/3 cup panko breadcrumbs
  • 1/2 cup shredded zucchini, moisture squeezed out
  • 1/2 cup shredded Parmesan cheese
  • 1 large egg
  • 1 tsp kosher salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/4 tsp black pepper

Method
 

  1. Preheat your air fryer to 380 degrees F.
  2. Line the air fryer basket with parchment paper or lightly oil the surface to prevent sticking.
  3. In a large mixing bowl, combine the ground chicken, panko, zucchini, Parmesan, egg, salt, garlic powder, onion powder, paprika, and black pepper.
  4. Mix the ingredients until just combined, being careful not to overwork the meat.
  5. Roll the mixture into evenly sized meatballs, about 1-1.5 inches in diameter.
  6. Place the meatballs in the air fryer basket in a single layer, ensuring they do not touch.
  7. Air fry for 15 minutes, or until the meatballs reach an internal temperature of 165 degrees F and are golden brown.

Notes

Ensure the shredded zucchini is squeezed very well; excess moisture can make the meatballs too soft. You can substitute ground turkey if desired. These store well in the refrigerator for up to 3 days or can be frozen for up to 2 months.
