Ingredients
  

  • 0.5 lb lean ground beef
  • 0.5 small onion, minced
  • 1 clove garlic, minced
  • 2 cans (8oz each) no-sugar-added tomato sauce
  • 1 can (14oz) low-sodium beef broth
  • 1 tbsp erythritol brown sugar substitute
  • 1 tbsp lemon juice
  • 1 tsp Worcestershire sauce
  • 1 small head cabbage, thinly sliced
  • 2 cups cauliflower rice
  • 0.25 cup full-fat sour cream
  • Salt and black pepper to taste

Method
 

  1. Heat a large skillet over medium-high heat.
  2. Season ground beef with salt and pepper, then cook until browned, about 5 minutes.
  3. Add minced onion and garlic, cooking until translucent, about 2-3 minutes.
  4. Pour in tomato sauce, beef broth, brown sugar substitute, lemon juice, and Worcestershire sauce.
  5. Stir thoroughly to combine.
  6. Add the sliced cabbage and cauliflower rice to the skillet.
  7. Simmer until cabbage is tender and sauce has thickened to your liking.
  8. Stir in the sour cream just before serving.

Notes

Ensure the tomato sauce is free of added sugars to keep the carb count low. If the mixture is too thick, add a splash of water or extra beef broth. Store leftovers in an airtight container in the refrigerator for up to 3 days.
