Instant Pot Chicken Fried Rice

Ingredients
  

  • 2 cups dry white rice, rinsed
  • 2 cups cold filtered water
  • 0.5 tsp kosher salt
  • 3 tbsp vegetable oil
  • 1 lb chicken breast, diced small
  • 1 cup onion, finely chopped
  • Freshly cracked black pepper, to taste
  • 3 cloves garlic, minced
  • 1 cup frozen peas and carrots blend
  • 2 large eggs, lightly beaten
  • 1.5 tbsp low-sodium soy sauce
  • 3 stalks green onions, sliced
  • 1 tsp toasted sesame oil

Method
 

  1. Rinse the rice 2-3 times in a colander until the water runs clear.
  2. Combine the rinsed rice, water, and salt in the Instant Pot inner pot.
  3. Secure the lid, set the valve to sealing, and cook on Manual High Pressure for 4 minutes.
  4. Perform a 10-minute natural pressure release before venting any remaining steam.
  5. Remove the rice and set aside. Wipe the inner pot clean.
  6. Set the Instant Pot to Saute mode and heat 1.5 tbsp of vegetable oil.
  7. Add the chicken, seasoning with salt and pepper, and cook until browned and cooked through. Remove and set aside.
  8. Add the remaining oil to the pot, then saute the onion and garlic until fragrant.
  9. Stir in the frozen peas and carrots, cooking until thawed.
  10. Push the vegetables to one side and scramble the beaten eggs on the other side of the pot.
  11. Add the cooked rice and chicken back into the pot.
  12. Stir in the soy sauce and toasted sesame oil, tossing everything together until heated through.
  13. Garnish with green onions before serving.

Notes

Ensure you rinse the rice thoroughly to prevent a gummy texture. You can easily add extra vegetables like bell peppers or corn if you prefer a heartier meal. Store leftovers in an airtight container in the refrigerator for up to 3 days.
