Method
- Rinse the rice 2-3 times in a colander until the water runs clear.
- Combine the rinsed rice, water, and salt in the Instant Pot inner pot.
- Secure the lid, set the valve to sealing, and cook on Manual High Pressure for 4 minutes.
- Perform a 10-minute natural pressure release before venting any remaining steam.
- Remove the rice and set aside. Wipe the inner pot clean.
- Set the Instant Pot to Saute mode and heat 1.5 tbsp of vegetable oil.
- Add the chicken, seasoning with salt and pepper, and cook until browned and cooked through. Remove and set aside.
- Add the remaining oil to the pot, then saute the onion and garlic until fragrant.
- Stir in the frozen peas and carrots, cooking until thawed.
- Push the vegetables to one side and scramble the beaten eggs on the other side of the pot.
- Add the cooked rice and chicken back into the pot.
- Stir in the soy sauce and toasted sesame oil, tossing everything together until heated through.
- Garnish with green onions before serving.
Notes
Ensure you rinse the rice thoroughly to prevent a gummy texture. You can easily add extra vegetables like bell peppers or corn if you prefer a heartier meal. Store leftovers in an airtight container in the refrigerator for up to 3 days.
