Honey BBQ Chicken & Garlic Potatoes

Sticky-barbecue chicken and crispy-garlic potatoes roasted in one pan for an easy, flavorful weeknight meal. Sweet honey and tangy BBQ glaze pair perfectly with golden garlic crust on tender chicken and potatoes.

Ingredients
  

  • Chicken thighs or breasts
  • 4
  • Choose thighs for juicier results
  • Barbecue sauce
  • 1 cup
  • Lodge® is a reliable brand
  • Honey
  • 2 tbsp
  • Use local raw honey for floral notes
  • Olive oil (chicken)
  • 1 tbsp
  • Swap for avocado oil
  • Baby potatoes
  • 1½ lb
  • Red bliss work well
  • Olive oil (potatoes)
  • 3 tbsp
  • Replace with Greek yogurt for lighter
  • Garlic
  • 4 cloves
  • Grate for maximum flavor
  • Italian seasoning
  • 1 tsp
  • Dry oregano/thyme combo works
  • Parsley
  • 2 tbsp
  • Use cilantro for Mexican twist

Method
 

  1. Preheat oven to 400°F
  2. In bowl, combine potatoes, 3 tbsp oil, garlic, Italian seasoning, salt, pepper. Toss until coated
  3. Spread in single layer on rimmed baking sheet
  4. Bake 20 mins, flipping halfway through
  5. Whisk barbecue sauce, honey, 1 tbsp oil, garlic powder, paprika, salt, pepper in small bowl
  6. Move potatoes to edges of sheet. Brush chicken with glaze and place on sheet
  7. Bake 20-25 mins more until chicken reaches 165°F
  8. Sprinkle potatoes with parsley before serving. Let rest 5 mins before slicing chicken

Notes

Baste chicken with pan juices after resting for extra flavor
Pressed garlic softens into potatoes without needing to peel cloves
Customize with paprika or smoked salt for extra depth
