Ingredients
  

  • 4 large eggs
  • 4 oz beef bacon, chopped
  • 2 Tbsp red wine vinegar
  • 1 Tbsp Dijon mustard
  • 1 tsp sugar
  • 1/4 cup extra-virgin olive oil
  • 8 cups frisée, torn
  • 2 cups rotisserie chicken, shredded
  • 2 large beefsteak tomatoes, cut into wedges
  • 1 ripe avocado, quartered

Method
 

  1. Boil 8 cups of water and cook eggs for exactly 7 minutes
  2. Transfer eggs to an ice water bath for 5 minutes then peel and set aside
  3. Cook beef bacon in a dry skillet over medium-low heat until crisp
  4. Remove bacon, reserving the rendered fat in the pan
  5. Whisk vinegar, Dijon mustard, and sugar into the warm rendered beef fat in the pan
  6. Slowly whisk in the extra-virgin olive oil to create an emulsified dressing
  7. Toss the frisée with a portion of the warm dressing
  8. Divide the dressed greens among plates
  9. Top with shredded chicken, beef bacon, tomato wedges, avocado quarters, and halved boiled eggs
  10. Drizzle with remaining dressing and serve immediately

Notes

Ensure eggs are at room temperature before boiling to prevent cracking. Use red wine vinegar as a non-alcoholic substitute for sherry vinegar. Keep avocado pits in the salad if not serving immediately to prevent browning.
