- Heat the olive oil in a large pot or Dutch oven over medium heat.
- Add the onion, leek, carrots, parsnips, and celery; sauté until softened, about 8 minutes.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Pour in the chicken broth and add the thyme, tarragon, bay leaf, salt, and pepper.
- Bring the liquid to a gentle simmer.
- Carefully place the chicken breasts into the simmering broth.
- Cover and poach for 12-15 minutes, or until the chicken is cooked through.
- Remove the chicken to a cutting board, let rest, then shred or dice into bite-sized pieces.
- Return the chicken to the pot and stir in the fresh parsley.
- Remove the herb sprigs and bay leaf before serving.
Notes
Ensure the chicken is patted dry before adding to the pot to prevent splashing. You can store leftovers in an airtight container in the refrigerator for up to 3 days. The soup can be reheated on the stove over medium-low heat.
