Grilled Tilapia with Sautéed Vegetables

Ingredients
  

  • Corn on the cob
  • 2 ears
  • Yellow onion
  • 1 large
  • Red bell pepper
  • 1 large
  • Garlic
  • 4 cloves
  • Unsalted butter
  • 3 tablespoons
  • Oil (optional)
  • 1 tablespoon
  • Cajun seasoning
  • 1 tablespoon
  • Salt
  • 1 tsp
  • Black pepper
  • 0.5 tsp
  • Tilapia fillets
  • 4 at 4–6 oz each
  • Lemon wedges
  • 4–6

Method
 

  1. Trim corn husks and silk; cut 6-7 rounds per ear
  2. Thin onion slices (1/8") and red bell pepper strips
  3. Mince garlic and measure all seasonings
  4. Heat 3 tbsp butter (or oil) in a skillet until sizzling
  5. Add onion and garlic, sauté 3 minutes
  6. Add red pepper; cook 2–3 minutes until softened
  7. Pour in corn rounds and ½ tsp salt
  8. Stir in remaining cajun seasoning and black pepper
  9. Simmer 3 minutes until corn achieves slight char
  10. Pat tilapia dry to ensure golden sear
  11. Season both sides with cajun mix and remaining salt/pepper
  12. Push vegetables aside to create fish space
  13. Cook tilapia 3–4 minutes per side until edges are opaque and center is flaky

Notes

Fresh corn is preferred; thaw frozen if unavailable
Red onion can replace yellow onion
Green bell pepper is an acceptable substitute
Use oil for a dairy-free version
Serve with rice for a heartier meal or chilled for picnics
