- Trim pineapple, remove core, and cut into 1-inch spears
- Mix brown sugar and cinnamon; brush mixture onto pineapple
- Grill 3-4 spears at a time for 3-4 minutes per side until golden and caramelized
- Sprinkle toasted coconut, lime juice, and chili powder as desired
