Ingredients
  

  • 1.5 lbs boneless skinless chicken breast
  • 1/4 cup + 1 tbsp honey
  • 1/4 cup fresh lemon juice
  • 2 tsp apple cider vinegar
  • 2 tbsp dijon mustard
  • 3/4 cup extra virgin olive oil
  • 1/2 tsp salt
  • 1/2 tsp dried rosemary

Method
 

  1. Whisk together honey, lemon juice, apple cider vinegar, dijon mustard, olive oil, salt, and rosemary until emulsified.
  2. Reserve 1/2 cup of the marinade for later use.
  3. Pound chicken breasts to an even 1/2 inch thickness.
  4. Place chicken in a shallow dish and cover with the remaining marinade.
  5. Refrigerate for at least 1 hour, or up to 12 hours for deeper flavor.
  6. Preheat grill to medium-high heat.
  7. Grill chicken for approximately 4 minutes per side or until fully cooked through.
  8. Remove from heat and let rest before serving.

Notes

Ensure you crush the dried rosemary with your fingers before adding to the marinade to release essential oils. The reserved marinade makes an excellent drizzle for fresh greens.
