Ingredients
  

  • 1 lb boneless skinless chicken breasts
  • 6 cups romaine lettuce, chopped
  • 3/4 cup cherry tomatoes, halved
  • 3/4 cup corn kernels
  • 3/4 cup cucumber, chopped
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup beef-free bacon bits
  • 1/2 cup blue cheese, crumbled
  • 1 avocado, sliced
  • 1/4 cup fresh lemon juice
  • 2 tbsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • 1 tsp sugar
  • 1 shallot, minced
  • 1 tsp dried oregano
  • 1 tsp dried parsley

Method
 

  1. Whisk together lemon juice, Dijon mustard, apple cider vinegar, sugar, shallot, oregano, and parsley in a bowl.
  2. Reserve half of the dressing as a topping for the completed salad.
  3. Submerge chicken in the remaining half of the dressing and marinate for at least one hour.
  4. Preheat grill to medium-high heat.
  5. Remove chicken from marinade and grill for 5-6 minutes per side until fully cooked internally.
  6. Allow chicken to rest before slicing into strips.
  7. Assemble salad by tossing romaine with the reserved dressing, then top with chicken, tomatoes, corn, cucumber, onion, bacon bits, cheese, and avocado.

Notes

Ensure chicken reaches an internal temperature of 165°F. You can swap seasonal greens like arugula or spinach if preferred. Keep the salad components separate until ready to serve to maintain crispiness.
