Ingredients
  

  • Chopped lettuce (6 cups)
  • Marinated chicken (8 oz)
  • Tomatoes (2 cups)
  • Cucumber (1 cup)
  • Kalamata olives (¼ cup)
  • Feta cheese (¼ cup)
  • Extra virgin olive oil (¼ cup)
  • Apple cider vinegar (¼ cup)
  • Minced garlic (1 clove)
  • Dried oregano (1 tsp)
  • Sugar (1 tsp)
  • Salt (to taste)
  • Black pepper (to taste)

Method
 

  1. Assemble the salad base by placing chopped lettuce in a large bowl
  2. Layer marinated chicken, tomatoes, cucumber, olives, and feta cheese on top
  3. In a jar, combine olive oil, apple cider vinegar, garlic, oregano, sugar, salt, and pepper. Shake to emulsify
  4. Drizzle dressing over the salad and toss gently until evenly coated

Notes

Use iceberg lettuce for firm texture
Marinate chicken in olive oil, lemon, and herbs for enhanced flavor
Adjust seasoning to taste
Store leftovers in an airtight container for up to 2 days
For vegan option, substitute feta with crumbled tofu or vegan cheese
Replace apple cider vinegar with white vinegar if preferred
