Ingredients
  

  • 1 ¼ pounds boneless skinless chicken breasts
  • ¼ cup olive oil (substitute 3 tbsp water/avocado oil if oil-free)
  • 1 teaspoon lemon zest (substitute ½ tsp lemon extract)
  • 2 tablespoons lemon juice
  • 2 tablespoons honey (substitute agave syrup for vegan option)
  • 1 teaspoon garlic powder (substitute 1 tsp fresh garlic, minced)
  • 2 ½ teaspoons dried mixed herbs (substitute 1 tsp each oregano and basil)
  • 1 cup Greek yogurt (drained), for tzatziki (substitute vegan yogurt if needed)
  • ½ cup grated cucumber (about 1 small cucumber), for tzatziki
  • 1 tablespoon lemon juice, for tzatziki
  • 1 teaspoon minced garlic (fresh), for tzatziki
  • ¼ teaspoon salt (adjust to taste), for tzatziki
  • 2 cups mixed fresh vegetables (e.g., cucumber slices, cherry tomatoes, bell peppers, zucchini, radishes)
  • 1 ½ cups cooked quinoa or white rice (base for the bowl)

Method
 

  1. Whisk ¼ cup olive oil, 1 tsp lemon zest, 2 tbsp lemon juice, 2 tbsp honey, 1 tsp garlic powder, and 2 ½ tsp dried mixed herbs to create the chicken marinade
  2. Pound chicken breasts to ½-inch thickness for even cooking
  3. Marinate chicken for 30 minutes to 2 hours at room temperature (flip halfway if marinating longer than 1 hour)
  4. Whisk tzatziki: combine 1 cup Greek yogurt, ½ cup grated cucumber, 1 tbsp lemon juice, 1 tsp minced garlic, and ¼ tsp salt
  5. Air fry chicken at 400°F for 7 minutes per side, or pan-sear over medium heat for 7–8 minutes per side until internal temperature reaches 165°F
  6. Let chicken rest for 5 minutes before slicing or tearing apart
  7. While cooking chicken, prepare cooked quinoa/rice and arrange fresh vegetables
  8. Top ½-inch grilled chicken over ⅔ cup quinoa/rice per bowl
  9. Add 1–2 tbsp tzatziki and ½ cup raw vegetables to each bowl
  10. Drizzle with additional lemon juice if desired

Notes

Chicken thighs yield juicier results
Tzatziki can be pre-made and chilled for up to 3 days
Adjust vegetables based on seasonal produce
For oil-free: add 5 drops olive oil to marinade and use avocado oil in ingredients table
Skillet cooking method may take 20 minutes total for 4 servings (adjust per chicken size)
