Method
- Whisk ¼ cup olive oil, 1 tsp lemon zest, 2 tbsp lemon juice, 2 tbsp honey, 1 tsp garlic powder, and 2 ½ tsp dried mixed herbs to create the chicken marinade
- Pound chicken breasts to ½-inch thickness for even cooking
- Marinate chicken for 30 minutes to 2 hours at room temperature (flip halfway if marinating longer than 1 hour)
- Whisk tzatziki: combine 1 cup Greek yogurt, ½ cup grated cucumber, 1 tbsp lemon juice, 1 tsp minced garlic, and ¼ tsp salt
- Air fry chicken at 400°F for 7 minutes per side, or pan-sear over medium heat for 7–8 minutes per side until internal temperature reaches 165°F
- Let chicken rest for 5 minutes before slicing or tearing apart
- While cooking chicken, prepare cooked quinoa/rice and arrange fresh vegetables
- Top ½-inch grilled chicken over ⅔ cup quinoa/rice per bowl
- Add 1–2 tbsp tzatziki and ½ cup raw vegetables to each bowl
- Drizzle with additional lemon juice if desired

Chicken thighs yield juicier results
Tzatziki can be pre-made and chilled for up to 3 days
