Ingredients
  

  • 8 oz plain goat cheese (softened)
  • 4 oz cream cheese (softened)
  • 4 oz halal-cured prosciutto (finely chopped)
  • 1 tsp fresh thyme leaves (or ½ tsp dried)
  • ½ cup roasted pistachios (finely chopped)
  • 1 tsp orange zest (no pith)
  • ½ cup Castelvetrano olives (for garnish)

Method
 

  1. Soften goat cheese and cream cheese at room temperature for 30 minutes.
  2. Finely chop prosciutto, pistachios, and thyme leaves. Grate orange zest without pith.
  3. Combine softened cheeses and chopped prosciutto in a bowl; mix until smooth.
  4. Fold in orange zest and thyme leaves.
  5. Incorporate chopped pistachios into the mixture with a gentle but thorough hand.
  6. Scoop 1 tablespoon of the mixture and shape into a compact ball by wrapping in plastic wrap.
  7. Place chilled bonbons in the refrigerator for at least 30 minutes.
  8. Unwrap and serve with a sliced Castelvetrano olive pressed into the top of each.

Notes

Halal-cured prosciutto alternatives are recommended for dietary compliance.
Substitute pistachios with sliced almonds or walnuts for variety.
Use fresh thyme for the best flavor; dried thyme is an acceptable substitute.
Chill bonbons longer for firmer texture, up to 1 hour.
Serve with crusty bread and olives for a complete Mediterranean platter.
