Method
- Heat a large saute pan over medium heat and brown the ground turkey until fully cooked.
- Remove the turkey from the pan and transfer it into the slow cooker.
- Add the chopped celery and carrots to the same pan used for the turkey and sweat the vegetables until softened.
- Add the onion, garlic, and bell peppers to the pan and continue sautéing until fragrant.
- Transfer all vegetables to the slow cooker.
- Add the drained pinto beans, garbanzo beans, crushed tomatoes, chili powder, cumin, salt, and pepper to the slow cooker.
- Add water as needed to reach your desired consistency.
- Cover and slow cook for 4 hours on low heat until flavors have melded and vegetables are tender.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. This chili also freezes beautifully for up to 3 months. Adjust the spiciness by adding more chili powder or a dash of cayenne.
