Garlic Parmesan Focaccia

Ingredients
  

  • 4 cups all-purpose flour
  • 2¼ tsp active dry yeast
  • 1¾ cups warm water (not hotter than microwave-warm)
  • 1 tbsp sugar or honey
  • 2 tsp salt
  • ¼ cup olive oil, plus extra
  • 4 cloves garlic
  • 1 cup grated parmesan (use vegan or pecorino as substitutes)

Method
 

  1. Pour warm water into a large bowl, ensuring it's skin-touching warmth (100-110°F)
  2. Stir in sugar and yeast, then let rest 5 minutes until bubbly
  3. Grasp in flour, salt, and olive oil
  4. Knead for 8 minutes until smooth, elastic (PASS the windowpane test)
  5. Rest in an oiled bowl covered with a kitchen towel
  6. Once risen, preheat your oven and prepare a parchment-lined tin by coating with olive oil
  7. Press dimples into the dough with fingers, drizzle more olive oil, and press crushed garlic into the dimples
  8. Sprinkle grated parmesan and flaked sea salt over the surface
  9. Bake for 25 minutes or until golden and crisp

Notes

Use bread flour for extra chew
Adjust salt to taste

Garlic can be substituted with garlic powder
