  • 2 large boneless, skinless chicken breasts (cut in half horizontally to create 4 steaks)
  • 3 tbsp extra virgin olive oil
  • 1 tsp brown sugar
  • 1 tbsp fresh lemon juice
  • 1 tsp fresh minced garlic
  • 1 tsp sweet paprika
  • 1 tsp dried thyme
  • 1 tsp sea salt flakes
  • 0.5 tsp freshly cracked black pepper

Method
 

  1. Preheat your oven to 220°C (425°F) or 200°C (400°F) for fan-forced.
  2. Place chicken breasts between sheets of parchment paper and pound with a mallet to a uniform 1.5 cm thickness.
  3. In a small bowl, whisk together olive oil, brown sugar, lemon juice, minced garlic, paprika, thyme, salt, and pepper.
  4. Place the chicken in a shallow dish or zip-top bag and coat thoroughly with the marinade mixture.
  5. Arrange the chicken on a parchment-lined baking sheet in a single layer.
  6. Roast for 15-18 minutes, or until the internal temperature reaches 74°C (165°F).
  7. Remove from the oven and let rest for 5 minutes before serving.

Notes

Ensure the chicken is pounded to an even thickness to guarantee consistent cooking times.
If you do not have dried thyme, Italian seasoning is a wonderful alternative.
Store any leftovers in an airtight container in the refrigerator for up to 3 days.
