  • 4 boneless skinless chicken breasts (8 oz each)
  • 2 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1/2 tsp dried rosemary
  • 1/2 tsp dried parsley
  • 1 tbsp olive oil
  • 3 tbsp unsalted butter
  • 1/2 cup reduced sodium chicken broth
  • 5 cloves garlic, minced

Method
 

  1. Pat chicken breasts dry and pound to an even thickness.
  2. Combine salt, pepper, thyme, oregano, rosemary, and parsley in a small bowl, then coat the chicken evenly with the spice blend.
  3. Heat the olive oil in a stainless steel skillet over medium-high heat.
  4. Sear the chicken for about 5-6 minutes per side until golden brown and cooked through; remove and set aside.
  5. In the same skillet, melt the butter and add the minced garlic, cooking until fragrant.
  6. Pour in the chicken broth, deglazing the pan by scraping up the browned bits with a wooden spoon.
  7. Return the chicken to the skillet, spooning the garlic butter sauce over the meat, and simmer for another minute before serving.
