Ingredients
  

  • 1 tbsp olive oil
  • 1 large yellow onion
  • 1 lb ground beef (90/10)
  • 1 tbsp Worcestershire sauce (alcohol-free)
  • 1 tbsp Dijon mustard
  • 1 tbsp tomato paste
  • ½ cup beef broth (low-sodium)
  • 1½ cups Gruyère cheese
  • ½ tsp salt

Method
 

  1. Heat olive oil in a large skillet over medium heat
  2. Thinly slice yellow onion and cook with salt for 15-20 minutes until deeply caramelized
  3. Push onions to the edge, add beef, and cook 6-7 minutes until browned
  4. Combine beef and onions, stir in Worcestershire, mustard, and tomato paste
  5. Add beef broth and simmer 5 minutes
  6. Stir in Gruyère until melted and glossy

Notes

Use avocado oil for smoky flavor
Red onion substitute for color
Provolone melts well in place of Gruyère
Check Worcestershire sauce label for alcohol content
