Method
- Heat olive oil in a large skillet over medium heat
- Thinly slice yellow onion and cook with salt for 15-20 minutes until deeply caramelized
- Push onions to the edge, add beef, and cook 6-7 minutes until browned
- Combine beef and onions, stir in Worcestershire, mustard, and tomato paste
- Add beef broth and simmer 5 minutes
- Stir in Gruyère until melted and glossy
