  • 6 bone-in, skin-on chicken thighs
  • 1 pound baby potatoes (red or yellow)
  • 1/4 cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 4 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp ground coriander
  • Salt and black pepper to taste

Method
 

  1. Preheat your oven to 400°F.
  2. Pat the chicken thighs and baby potatoes dry with paper towels to ensure crispy skin.
  3. Place the chicken and potatoes into a 9x13 oven-safe baking dish.
  4. In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, paprika, cumin, onion powder, garlic powder, coriander, salt, and pepper.
  5. Drizzle the mixture over the chicken and potatoes in the dish.
  6. Use your hands to ensure every piece is thoroughly coated in the marinade.
  7. Arrange the potatoes around the chicken thighs, ensuring they do not sit on top of the meat to allow for even airflow and crisping.
  8. Roast in the oven for 60 minutes or until the chicken skin is crispy and the potatoes are fork-tender.

Notes

Ensure the potatoes are arranged in a single layer around the chicken for the best texture. If you do not have balsamic vinegar, apple cider vinegar is a suitable alternative. Store leftovers in an airtight container for up to 3 days.
