- Arrange the potatoes around the chicken thighs, ensuring they do not sit on top of the meat to allow for even airflow and crisping.
- Roast in the oven for 60 minutes or until the chicken skin is crispy and the potatoes are fork-tender.
Notes
Ensure the potatoes are arranged in a single layer around the chicken for the best texture. If you do not have balsamic vinegar, apple cider vinegar is a suitable alternative. Store leftovers in an airtight container for up to 3 days.
