Ingredients
  

  • 500g Chicken Thighs (finely diced)
  • 3 tbsp Olive Oil (divided)
  • 1 tsp Sweet Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 0.5 tsp Cumin
  • 0.5 tsp Dried Oregano
  • 1 tsp Sea Salt Flakes
  • 0.5 tsp Black Pepper
  • 1 Red Onion (finely diced)
  • 1 tsp Fresh Garlic (minced)
  • 4 Large Flour Tortillas
  • 250g Shredded Cheese (Cheddar or Mozzarella)

Method
 

  1. In a bowl, combine the diced chicken with 2 tablespoons of olive oil and all the dry spices. Mix well and let it marinate for 10 minutes.
  2. Heat the remaining tablespoon of olive oil in a large deep frying pan over medium-high heat.
  3. Add the red onion and minced garlic to the pan, sautéing for 2 minutes until softened.
  4. Add the seasoned chicken to the pan and cook until browned and fully cooked through.
  5. Remove the chicken mixture from the pan and wipe the pan clean.
  6. Place a tortilla in the pan, sprinkle a layer of cheese, add the chicken mixture, and top with more cheese.
  7. Place another tortilla on top or fold the existing one over.
  8. Cook for 2-3 minutes per side until the tortilla is crispy and the cheese is thoroughly melted.
  9. Remove from the pan, slice into wedges, and serve warm.

Notes

You can substitute chicken thighs with breasts for a leaner version. Add jalapeños or bell peppers for extra crunch and heat. Store leftovers in an airtight container and reheat in a dry pan to maintain crispiness.
