- In a bowl, combine the diced chicken with 2 tablespoons of olive oil and all the dry spices. Mix well and let it marinate for 10 minutes.
- Heat the remaining tablespoon of olive oil in a large deep frying pan over medium-high heat.
- Add the red onion and minced garlic to the pan, sautéing for 2 minutes until softened.
- Add the seasoned chicken to the pan and cook until browned and fully cooked through.
- Remove the chicken mixture from the pan and wipe the pan clean.
- Place a tortilla in the pan, sprinkle a layer of cheese, add the chicken mixture, and top with more cheese.
- Place another tortilla on top or fold the existing one over.
- Cook for 2-3 minutes per side until the tortilla is crispy and the cheese is thoroughly melted.
- Remove from the pan, slice into wedges, and serve warm.
Notes
You can substitute chicken thighs with breasts for a leaner version. Add jalapeños or bell peppers for extra crunch and heat. Store leftovers in an airtight container and reheat in a dry pan to maintain crispiness.
