Easy Weeknight Chicken Fried Rice

Ingredients
  

  • 1 lb chicken breast, diced into 1/2-inch pieces
  • 2 tbsp sesame oil
  • 2 tbsp canola or olive oil
  • 1.5 cups frozen vegetables (peas, carrots, corn)
  • 3 stalks green onions, thinly sliced
  • 3 cloves garlic, finely minced
  • 3 large eggs, lightly beaten
  • 4 cups cold long-grain white rice
  • 4 tbsp low-sodium soy sauce

Method
 

  1. Heat sesame and canola oils in a large non-stick skillet or wok over medium-high heat.
  2. Add diced chicken to the skillet and cook for 3-5 minutes until browned and cooked through.
  3. Remove chicken with a slotted spoon and set aside, leaving residual oil in the pan.
  4. Add frozen vegetables and sauté for 2-3 minutes until tender-crisp.
  5. Add garlic and green onions, cooking for another minute until fragrant.
  6. Push vegetables to one side, pour in beaten eggs, and scramble until set.
  7. Add the cold rice, breaking up any clumps, and toss with the vegetable-egg mixture.
  8. Return the cooked chicken to the pan and pour in the soy sauce.
  9. Stir-fry everything together over high heat for 2-3 minutes until well combined and heated through.

Notes

Always use cold or day-old rice to ensure perfectly separated, non-mushy grains. For best results, keep the heat high throughout the cooking process to properly sear the ingredients.
