Ingredients
  

  • 1 lb lean ground beef
  • 1 packet taco seasoning
  • 1 (15-oz) can chili beans (do not drain)
  • 2 heads romaine lettuce, chopped
  • 1 pint grape tomatoes, halved
  • 1 cup shredded cheddar cheese
  • 1/2 cup Greek yogurt or sour cream

Method
 

  1. Brown the lean ground beef in a large skillet over medium-high heat.
  2. Break the meat into small pieces using a wooden spoon.
  3. Add the taco seasoning and 1/2 cup of water to the skillet, stirring well.
  4. Add the undrained can of chili beans to the beef mixture and simmer until the liquid reduces slightly.
  5. Prepare the base by dividing the chopped romaine lettuce into four serving bowls.
  6. Top each bowl with the warm beef and bean mixture.
  7. Add the halved grape tomatoes and shredded cheese over the meat.
  8. Garnish each salad with a dollop of Greek yogurt or sour cream before serving.

Notes

Substitute ground beef with ground turkey for a leaner option. Use low-sodium taco seasoning to control salt content. Store leftovers separately to keep lettuce crisp.
