- Pat chicken strips dry with paper towels.
- Season chicken thoroughly with fajita seasoning.
- Heat oil in a large cast iron skillet over medium-high heat.
- Add chicken to the skillet and sauté for 5-7 minutes per side until fully cooked (165°F).
- Remove chicken from the pan to a plate and cover with foil to keep warm.
- Add bell peppers and onions to the remaining pan juices.
- Sauté vegetables for 4-5 minutes until softened and slightly caramelized.
- Return chicken to the pan to combine flavors briefly before serving with lime wedges.
Notes
Ensure you pat the chicken dry before seasoning to achieve a better sear. If you prefer extra heat, add a pinch of chili flakes during the vegetable sauté. Serve with warm flour tortillas or over a bed of cilantro lime rice.
