Ingredients
  

  • 1 lb boneless, skinless chicken breasts, sliced into strips
  • 2 tbsp fajita seasoning
  • 2 tbsp extra virgin olive oil
  • 2 large bell peppers, sliced into strips
  • 1 medium onion, sliced into half moons
  • 1/2 tsp sea salt
  • 1/4 tsp freshly cracked black pepper
  • Lime wedges for serving

Method
 

  1. Pat chicken strips dry with paper towels.
  2. Season chicken thoroughly with fajita seasoning.
  3. Heat oil in a large cast iron skillet over medium-high heat.
  4. Add chicken to the skillet and sauté for 5-7 minutes per side until fully cooked (165°F).
  5. Remove chicken from the pan to a plate and cover with foil to keep warm.
  6. Add bell peppers and onions to the remaining pan juices.
  7. Sauté vegetables for 4-5 minutes until softened and slightly caramelized.
  8. Return chicken to the pan to combine flavors briefly before serving with lime wedges.

Notes

Ensure you pat the chicken dry before seasoning to achieve a better sear. If you prefer extra heat, add a pinch of chili flakes during the vegetable sauté. Serve with warm flour tortillas or over a bed of cilantro lime rice.
