Ingredients
  

  • 6 boneless skinless chicken thighs (approx. 2 lbs)
  • 1/4 cup cornstarch
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 tablespoons cooking oil
  • 3 tablespoons unsalted butter
  • 1 tablespoon garlic paste
  • 1 tablespoon ginger paste
  • 1/3 cup low-sodium soy sauce
  • 1/3 cup packed brown sugar

Method
 

  1. Pat the chicken thighs dry with paper towels and season with salt and pepper.
  2. Place chicken and cornstarch in a bag, seal, and shake until evenly coated.
  3. Heat the cooking oil in a large skillet over medium-high heat.
  4. Sear the chicken thighs until golden brown on both sides, about 3-4 minutes per side, then remove from pan.
  5. Lower the heat to medium and add butter, garlic paste, and ginger paste to the pan, sautéing until fragrant.
  6. Whisk in the soy sauce and brown sugar, simmering until the sauce begins to thicken into a glaze.
  7. Return the chicken to the skillet and coat thoroughly with the sauce until cooked through.
  8. Serve warm, optionally garnished with green onions or over steamed rice.

Notes

Ensure chicken is patted completely dry before coating with cornstarch for the best crispy texture. If the sauce becomes too thick, add a tablespoon of water to reach your desired consistency. Leftovers can be stored in an airtight container for up to 3 days.
