  • 1 small yellow onion, finely diced
  • 4 cups cooked shredded chicken
  • 1 tbsp taco seasoning
  • 4 oz canned diced green chilies
  • 19 oz red enchilada sauce
  • 8 corn tortillas, cut into strips
  • 2 cups Mexican blend cheese, shredded
  • Fresh cilantro for garnish

Method
 

  1. Preheat your oven to 350°F and ensure the rack is in the center position.
  2. Cut the corn tortillas into 1-inch by 3-inch strips.
  3. Heat olive oil in a large ovenproof skillet over medium heat.
  4. Sauté the diced onion until translucent and fragrant.
  5. Add the shredded chicken, taco seasoning, and green chilies, stirring to combine and coat the chicken.
  6. Pour in the red enchilada sauce and bring to a gentle simmer.
  7. Stir in the tortilla strips, ensuring they are submerged in the sauce.
  8. Sprinkle the shredded cheese evenly over the top.
  9. Transfer the skillet to the oven and bake until the cheese is bubbly and melted, about 10-15 minutes.
  10. Remove from the oven, garnish with fresh cilantro, and serve warm.

Notes

Use a rotisserie chicken to speed up the prep process significantly. If you prefer a spicier dish, add a pinch of red pepper flakes or use hot enchilada sauce. Store leftovers in an airtight container for up to 3 days.
