Ingredients
  

  • 1 lb boneless skinless chicken breasts, sliced
  • 2 tbsp fajita seasoning
  • 2 tbsp olive oil
  • 2 large bell peppers, sliced
  • 1 medium onion, sliced
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • Lime wedges for serving
  • 8 small flour tortillas

Method
 

  1. Pat the chicken breasts dry with paper towels.
  2. Season the chicken evenly on all sides with the fajita seasoning, rubbing it in well.
  3. Heat the olive oil in a large cast-iron skillet over medium-high heat until it shimmers.
  4. Add the chicken to the skillet and sauté for 5-7 minutes per side, or until the internal temperature reaches 165 degrees F.
  5. Remove the chicken from the skillet and set aside to rest.
  6. In the same skillet, add the sliced bell peppers and onions.
  7. Sauté the vegetables for 5-7 minutes until they are tender and slightly charred.
  8. Slice the cooked chicken into thin strips and return it to the pan with the vegetables.
  9. Season with salt and pepper, tossing everything together to reheat.
  10. Serve immediately in warm tortillas with optional lime wedges.

Notes

Ensure the skillet is hot enough before adding the chicken to get the best sear. You can add extra vegetables like zucchini if desired. Store leftovers in an airtight container for up to 3 days.
