Method
- Preheat your oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove seeds and membranes. Steam them for about 5-8 minutes until slightly tender, then set aside.
- In a large skillet, heat olive oil over medium-high heat. Add ground beef and turkey sausage, cooking until browned.
- Stir in the diced onion and garlic, cooking until translucent.
- Add the Italian seasoning, tomato paste, brown sugar substitute, diced tomatoes, marinara, chicken broth, Worcestershire sauce, and hot sauce.
- Fold in the cauliflower rice and simmer for 5-10 minutes until the mixture thickens.
- Stuff the peppers generously with the meat and rice mixture.
- Place peppers in a baking dish and bake for 30-35 minutes until the peppers are soft and the filling is bubbly.
Notes
You can top these with shredded mozzarella or parmesan cheese during the last 5 minutes of baking for extra richness. Store leftovers in an airtight container for up to 3 days.
