Easy Keto Stuffed Peppers

Ingredients
  

  • 6 large bell peppers
  • 1-2 tbsp olive oil
  • 3/4 lb ground beef (85/15 ratio)
  • 1/2 lb chicken or turkey Italian sausage, casings removed
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 2 tbsp tomato paste
  • 1 tbsp erythritol-based brown sugar substitute
  • 14.5 oz diced tomatoes, undrained
  • 1.5 cups sugar-free marinara sauce
  • 1/2 cup low-sodium chicken broth
  • 1 tsp Worcestershire sauce
  • 1 tsp hot sauce
  • 2 cups cauliflower rice

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove seeds and membranes. Steam them for about 5-8 minutes until slightly tender, then set aside.
  3. In a large skillet, heat olive oil over medium-high heat. Add ground beef and turkey sausage, cooking until browned.
  4. Stir in the diced onion and garlic, cooking until translucent.
  5. Add the Italian seasoning, tomato paste, brown sugar substitute, diced tomatoes, marinara, chicken broth, Worcestershire sauce, and hot sauce.
  6. Fold in the cauliflower rice and simmer for 5-10 minutes until the mixture thickens.
  7. Stuff the peppers generously with the meat and rice mixture.
  8. Place peppers in a baking dish and bake for 30-35 minutes until the peppers are soft and the filling is bubbly.

Notes

You can top these with shredded mozzarella or parmesan cheese during the last 5 minutes of baking for extra richness. Store leftovers in an airtight container for up to 3 days.
