  • 4 boneless skinless chicken breasts (4 oz each)
  • 1 tsp paprika
  • 1 tsp ground mustard seed
  • 1/4 tsp cayenne pepper
  • 1/2 tsp kosher salt
  • 1/8 tsp freshly cracked black pepper
  • 2 tbsp olive oil
  • 1/4 cup pure honey
  • 3 tbsp chicken stock
  • 2 tbsp Dijon mustard
  • 1 tbsp wholegrain mustard
  • 1 tsp white vinegar
  • 1 tsp sriracha
  • Handful fresh thyme

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together honey, chicken stock, Dijon mustard, wholegrain mustard, white vinegar, and sriracha until smooth.
  3. In a separate small dish, combine paprika, ground mustard seed, cayenne pepper, kosher salt, and ground pepper.
  4. Rub the spice mixture thoroughly over all sides of the chicken breasts.
  5. Heat olive oil in an oven-safe skillet over medium-high heat.
  6. Sear the chicken breasts for 2-3 minutes per side until a golden-brown crust forms.
  7. Pour the prepared honey-mustard glaze over the chicken.
  8. Transfer the skillet to the oven and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F.
  9. Garnish with fresh thyme before serving.

Ensure chicken breasts are of uniform thickness for even cooking; use a meat mallet if necessary. Store leftovers in an airtight container in the refrigerator for up to 3 days.
