Easy Greek Pasta Salad Recipe with Lemon Dressing

Ingredients
  

  • 12 ounces rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • 1 cup kalamata olives, sliced
  • 1 cup feta cheese, crumbled
  • 1 cup bell peppers, chopped
  • 2 tbsp chopped parsley
  • ⅓ cup olive oil
  • 3 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 tsp garlic powder

Method
 

  1. Bring a pot of salted water to a boil
  2. Cook pasta until al dente according to package instructions
  3. Drain pasta and rinse with cold water to cool
  4. In a large bowl, whisk together olive oil, lemon juice, oregano, garlic powder, and a pinch of salt
  5. Add cooled pasta to the dressing and toss until evenly coated
  6. Fold in cherry tomatoes, cucumber, red onion, olives, bell peppers, and parsley
  7. Stir in crumbled feta cheese
  8. Chill in the refrigerator for at least 30 minutes before serving

Notes

For a meat-free version, omit olives or substitute with roasted chickpeas
Store in an airtight container in the fridge for up to 3 days
Add grilled chicken or shrimp for extra protein if desired
Use a mix of colored bell peppers for visual appeal
