- Place the four chicken breasts in the bottom of the slow cooker.
- Sprinkle the taco seasoning evenly over the top and bottom of the chicken.
- Pour one cup of the salsa over the chicken to serve as the braising liquid.
- Cover with the lid and cook on high for 3 hours or on low heat for 6 to 8 hours until reaching 165F.
- Transfer the chicken to a large bowl or cutting board.
- Shred the chicken using two forks.
- Stir in the remaining cup of salsa to keep the meat moist and flavorful.
- Serve garnished with fresh cilantro and lime wedges.
Notes
Ensure chicken is cooked to an internal temperature of 165F. Use a low-sodium taco seasoning if you are watching your salt intake. The remaining cup of salsa can be mixed in after shredding for extra flavor and moisture. Store leftovers in an airtight container for up to 3 days.
