- Heat oil in a heavy-bottomed pan over medium heat.
- Add bay leaf, cinnamon, cloves, and cardamom to the oil until fragrant.
- Sauté onions and green chilies until they reach a deep golden brown.
- Add ginger-garlic paste and cook for one minute until the raw smell dissipates.
- Stir in pureed tomatoes, turmeric, and salt, cooking until the mixture thickens into a base.
- Transfer the mixture to a crockpot.
- Add the chicken pieces, remaining spices, and yogurt to the crockpot.
- Pour in enough hot water to just submerge the chicken.
- Cover and cook on low setting for 4 hours until the chicken is fork-tender.
- Garnish with fresh cilantro before serving.
Notes
Ensure you brown the onions well, as this provides the deep color and foundational flavor for the curry gravy. Bone-in chicken adds significantly more flavor and moisture to the sauce during the slow-cooking process.
