Ingredients
  

  • 1 pound chicken breasts, thinly cut
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons olive oil, divided
  • 3 medium bell peppers (mix of red and green), sliced
  • 1 large yellow onion, thinly sliced
  • 1 medium lime, juiced
  • 8 flour tortillas

Method
 

  1. In a medium bowl, combine chili powder, cumin, garlic powder, paprika, oregano, salt, and pepper.
  2. Toss the chicken breasts in the spice mixture until evenly coated.
  3. Warm flour tortillas over a medium open flame or in a dry skillet, then wrap in a clean towel to keep warm.
  4. Heat 2 tablespoons of oil in a large skillet over medium-high heat.
  5. Add the chicken to the skillet and cook until golden brown and cooked through, then remove from the pan.
  6. Add the remaining tablespoon of oil to the same skillet.
  7. Add bell peppers and onions, sautéing until tender-crisp.
  8. Return the chicken to the skillet, stir in the fresh lime juice, and toss everything together to combine.

Notes

Ensure you slice the peppers and onions uniformly so they cook at the same rate. Fresh lime juice is essential for the bright flavor profile of these fajitas. Serve immediately with optional toppings like fresh cilantro, avocado wedges, or sour cream.
