Ingredients
  

  • 1.25 lbs chicken breast, cubed into 1-inch pieces
  • 0.5 lb fusilli pasta
  • 3-4 cups broccoli florets, chopped
  • 1.5 cups low-sodium chicken broth
  • 1.25 cups half and half
  • 3 cups cheddar cheese, freshly shredded
  • 1 cup crispy fried onions
  • 0.5 chicken bouillon cube
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 350 F.
  2. Season the cubed chicken with salt, pepper, and Italian seasoning.
  3. Heat olive oil in a skillet over medium-high heat and sear the chicken until golden brown and fully cooked.
  4. Boil a large pot of salted water and cook the fusilli pasta until al dente.
  5. In the same skillet or a separate pot, combine chicken broth, bouillon, and half and half, simmering until slightly thickened.
  6. Stir in 2 cups of the cheddar cheese until melted into a smooth sauce.
  7. Combine the cooked pasta, seared chicken, and broccoli florets in a large baking dish.
  8. Pour the cheese sauce over the mixture and stir to combine thoroughly.
  9. Top with the remaining 1 cup of cheddar cheese and the crispy fried onions.
  10. Bake for approximately 50 minutes or until bubbly and golden brown on top.

Notes

Ensure you use low-sodium chicken broth to control the final saltiness of the dish, especially when using bouillon. Freshly shredded cheese is highly recommended for the smoothest melting texture.
