Ingredients
  

  • 2 English cucumbers, thick-skinned varieties preferred
  • ½ large red onion or 1 shallot (milder flavor)
  • ¼ cup white wine vinegar or apple cider vinegar
  • 1 tbsp honey, agave, or maple syrup
  • 1 tsp sea salt
  • 2 tbsp chopped fresh dill or sprigs frozen and thawed
  • Optional: 2 tbsp chopped chives, parsley, or cilantro

Method
 

  1. Peel cucumbers and red onion to remove the skins and reduce bitterness
  2. Thinly slice both ingredients using a mandoline for uniform texture
  3. Combine sliced cucumbers and onion in a glass bowl
  4. In a separate container, whisk together vinegar, honey (or substitute), and sea salt for 10 seconds
  5. Pour the dressing over the cucumbers and onion in the bowl, mixing gently
  6. Cover the bowl and refrigerate for 20 minutes for optimal flavor and texture
  7. Before serving, drain excess liquid using a slotted spoon or metal sieve
  8. Add freshly chopped dill and optional herbs
  9. Season with black pepper 5 minutes before serving for best flavor

Notes

Use parchment paper when slicing to prevent ingredients from slipping
Adjust vinegar quantity to taste for a tangier or milder flavor
