Ingredients

  • 1 large chicken breast, sliced into 2 thin cutlets
  • 1/3 cup panko breadcrumbs
  • 1/3 cup Parmesan cheese, finely grated
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1 large egg, whisked
  • Salt and black pepper to taste
  • Olive oil spray as needed

Method

  1. Preheat your air fryer to 400 degrees Fahrenheit for 5 minutes.
  2. Slice the chicken breast horizontally into two equal thin cutlets and pat them dry.
  3. Season each cutlet thoroughly with salt and pepper on both sides.
  4. In a shallow bowl, combine the panko, Parmesan, oregano, and garlic powder.
  5. In a separate bowl, whisk the egg until fully blended.
  6. Dip each chicken cutlet into the egg wash, shaking off any excess liquid.
  7. Press the chicken firmly into the panko mixture to ensure complete coverage on all sides.
  8. Spray the air fryer basket thoroughly with olive oil.
  9. Place the chicken in the basket and lightly mist the tops with olive oil spray.
  10. Cook at 400 degrees Fahrenheit for 10 to 12 minutes, flipping halfway through for even crisping.

Notes

Pat the chicken dry before seasoning to ensure the egg wash adheres properly.
Press the breadcrumb mixture firmly into the meat with your fingers instead of just dipping it to ensure a thicker, more durable crust.
Use gluten-free panko breadcrumbs if you have dietary restrictions.
