Ingredients
  

  • 2 pounds boneless skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1.25 cups BBQ sauce (divided)
  • 0.25 cup low-sodium chicken broth
  • 8 slider buns
  • 14 ounces coleslaw mix
  • 0.25 cup apple cider vinegar
  • 2 tablespoons honey
  • Salt and black pepper to taste

Method
 

  1. Season chicken breasts with garlic powder, onion powder, salt, and pepper.
  2. Place chicken in a slow cooker and cover with 3/4 cup of the BBQ sauce and the chicken broth.
  3. Cook on LOW for 3-4 hours until the internal temperature reaches 165F.
  4. Remove chicken and shred using two forks.
  5. Mix the shredded chicken with the remaining 1/2 cup of BBQ sauce.
  6. In a separate bowl, whisk together apple cider vinegar and honey.
  7. Toss the coleslaw mix with the vinegar-honey dressing.
  8. Assemble the sliders by placing the chicken on the buns and topping with the coleslaw.

Notes

Store the shredded chicken and coleslaw separately in airtight containers in the refrigerator to keep the bread from getting soggy. Use brioche buns for a softer, slightly sweet texture.
