Method
- Spray a large crockpot thoroughly with nonstick cooking spray.
- Place the chicken breasts at the bottom of the slow cooker in an even layer.
- Sprinkle the kosher salt and black pepper evenly over the chicken.
- Pour the entire jar of chunky salsa over the chicken.
- Place the block of cream cheese on top of the salsa.
- Cook on HIGH for 3.5 hours or on LOW for 6-8 hours until the chicken reaches 165 degrees Fahrenheit.
- Stir the sauce until the cream cheese is fully incorporated.
- Shred the chicken directly in the pot using two forks.
- Stir well to ensure the shredded chicken is evenly coated in the sauce.
Notes
Use full-fat cream cheese for the creamiest results. You can serve this shredded chicken over rice, inside warm tortillas for tacos, or alongside a crisp green salad. Leftovers store well in an airtight container in the refrigerator for up to 3 days.
