Ingredients
  

  • 3 heads garlic, tops and bottoms removed
  • 2 whole lemons, halved
  • 4 boneless, skinless chicken breasts
  • 4 tablespoons unsalted butter
  • 1 cup low-sodium chicken broth
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon chicken bouillon paste
  • 1 teaspoon dried oregano
  • 5 sprigs fresh thyme
  • Salt and black pepper to taste

Method
 

  1. Place the prepared garlic heads and halved lemons at the bottom of the crockpot.
  2. Mix salt, pepper, and dried oregano in a small bowl and season the chicken breasts thoroughly.
  3. Melt the butter in a large skillet over medium-high heat and sear the chicken breasts for 5 minutes per side until browned.
  4. Place the seared chicken into the crockpot on top of the garlic and lemons.
  5. Whisk together the chicken broth, lemon juice, and chicken bouillon paste, then pour the mixture over the chicken.
  6. Top with fresh thyme sprigs.
  7. Cover and cook on low for 3-6 hours until the chicken is tender and cooked through.
  8. Remove stems from the thyme before serving.

Notes

Ensure the chicken is patted dry before seasoning to get the best sear. The slow cooker time will depend on the thickness of the chicken breasts. Serving the garlic cloves squeezed out of their skins with the chicken adds a wonderful creamy texture.
