Ingredients
  

  • 2 lbs boneless skinless chicken breasts or thighs
  • 1 cup salsa
  • 0.5 cup chicken broth
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp coriander
  • 0.5 tsp sea salt
  • 0.25 tsp cayenne pepper
  • 0.25 tsp black pepper

Method
 

  1. Place the chicken, salsa, broth, and all dry spices into the slow cooker bowl.
  2. Cook on high setting for 4 to 5 hours until the chicken is tender.
  3. Remove the chicken and shred it thoroughly using two sharp forks.
  4. Return the shredded chicken to the slow cooker and simmer on low for 30 minutes to absorb the juices.
  5. Assemble into taco shells or bowls with fresh toppings and serve warm.

Notes

Use chicken broth instead of water for more depth. Adjust cayenne pepper to increase or decrease heat. Fresh minced garlic can be used in place of garlic powder.
