- In a small mixing bowl, combine the salt, Italian seasoning, black pepper, paprika, garlic powder, and onion powder.
- Place the cleaned baby red potatoes at the bottom of the Crockpot.
- Drizzle 1.5 tablespoons of olive oil over the potatoes and toss to coat evenly.
- Pat the chicken breasts dry and rub them with the remaining 1.5 tablespoons of olive oil, then season thoroughly with the prepared spice mixture.
- Place the seasoned chicken breasts on top of the potatoes in the Crockpot.
- In a separate small bowl, whisk together the soy sauce and Dijon mustard, then pour this mixture over the chicken and potatoes.
- Cover the Crockpot and cook on low for 6 to 8 hours, or on high for 4 hours, until the chicken is cooked through and potatoes are fork-tender.
Notes
Ensure potatoes are uniform in size for even cooking. For extra color, you can sear the chicken in a skillet before placing it in the Crockpot. Store leftovers in an airtight container in the refrigerator for up to 3 days.
