Ingredients
  

  • 1.5 pounds baby red potatoes, scrubbed and dried
  • 2 pounds boneless, skinless chicken breasts
  • 3 tablespoons olive oil, divided
  • 0.25 cup low-sodium soy sauce
  • 2 tablespoons Dijon mustard
  • 1.5 teaspoons kosher salt
  • 1 teaspoon dried Italian seasoning
  • 0.5 teaspoon freshly cracked black pepper
  • 0.5 teaspoon paprika
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder

Method
 

  1. In a small mixing bowl, combine the salt, Italian seasoning, black pepper, paprika, garlic powder, and onion powder.
  2. Place the cleaned baby red potatoes at the bottom of the Crockpot.
  3. Drizzle 1.5 tablespoons of olive oil over the potatoes and toss to coat evenly.
  4. Pat the chicken breasts dry and rub them with the remaining 1.5 tablespoons of olive oil, then season thoroughly with the prepared spice mixture.
  5. Place the seasoned chicken breasts on top of the potatoes in the Crockpot.
  6. In a separate small bowl, whisk together the soy sauce and Dijon mustard, then pour this mixture over the chicken and potatoes.
  7. Cover the Crockpot and cook on low for 6 to 8 hours, or on high for 4 hours, until the chicken is cooked through and potatoes are fork-tender.

Notes

Ensure potatoes are uniform in size for even cooking. For extra color, you can sear the chicken in a skillet before placing it in the Crockpot. Store leftovers in an airtight container in the refrigerator for up to 3 days.
