- Trim any excess fat from the chicken thighs and pat them dry thoroughly.
- In a small bowl, combine the Italian seasoning, parsley, paprika, garlic powder, onion powder, pepper, and salt.
- Rub the seasoning mixture firmly onto both sides of the chicken thighs.
- Heat the olive oil and butter in a large skillet over medium-high heat until the butter is melted and bubbling.
- Place the chicken in the skillet and cook for 6-7 minutes per side without crowding the pan.
- Ensure the chicken reaches an internal temperature of 165°F and the exterior is golden brown.
- Remove from the skillet and allow to rest for 3 minutes before serving.
Notes
Ensure the chicken is patted very dry before seasoning; moisture is the enemy of a good sear. If the skillet gets too hot or the spices begin to darken too quickly, reduce heat to medium. Always let the meat rest to retain juices.
