  • 5 Boneless skinless chicken thighs
  • 1 tbsp Olive oil
  • 1 tbsp Unsalted butter
  • 0.5 tsp Italian seasoning
  • 0.5 tsp Dried parsley
  • 0.5 tsp Sweet paprika
  • 0.5 tsp Garlic powder
  • 0.5 tsp Onion powder
  • 0.25 tsp Black pepper
  • 0.5 tsp Salt

Method
 

  1. Trim any excess fat from the chicken thighs and pat them dry thoroughly.
  2. In a small bowl, combine the Italian seasoning, parsley, paprika, garlic powder, onion powder, pepper, and salt.
  3. Rub the seasoning mixture firmly onto both sides of the chicken thighs.
  4. Heat the olive oil and butter in a large skillet over medium-high heat until the butter is melted and bubbling.
  5. Place the chicken in the skillet and cook for 6-7 minutes per side without crowding the pan.
  6. Ensure the chicken reaches an internal temperature of 165°F and the exterior is golden brown.
  7. Remove from the skillet and allow to rest for 3 minutes before serving.

Notes

Ensure the chicken is patted very dry before seasoning; moisture is the enemy of a good sear. If the skillet gets too hot or the spices begin to darken too quickly, reduce heat to medium. Always let the meat rest to retain juices.
