- In a large bowl, combine the shredded chicken, Mexican cheese, drained tomatoes and chiles, lime juice, oregano, chili powder, cumin, garlic powder, salt, black pepper, and cayenne pepper.
- Warm the corn tortillas in a microwave or on a dry skillet until they are soft and pliable to prevent cracking during rolling.
- Place a generous tablespoon of the chicken mixture near the edge of each warm tortilla.
- Roll the tortilla tightly into a thin cylinder and secure with a toothpick if necessary.
- Heat approximately 1/2 inch of vegetable oil in a large skillet over medium-high heat.
- Fry the taquitos in batches, seam-side down, until golden brown and crispy on all sides, about 2-3 minutes per batch.
- Drain on paper towels before serving warm with your favorite dips.
Notes
Ensure the diced tomatoes are very well drained to prevent soggy taquitos. Warming the tortillas is crucial for preventing breakage. For a healthier version, you can air fry these at 400°F for 8-10 minutes, lightly spraying with cooking oil.
