  • 4 boneless, skinless chicken breast halves
  • Salt and freshly ground pepper to taste
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 3/4 cup parmesan cheese, freshly grated
  • 2 tbsp all-purpose flour
  • 1/2 cup olive oil
  • 1/2 cup prepared tomato sauce
  • 1/4 cup mozzarella cheese, cubed
  • 1/2 cup provolone cheese, shredded
  • 1/4 cup fresh basil, chopped

Method
 

  1. Preheat your oven to 450 degrees F (230 degrees C).
  2. Place chicken between plastic sheets and pound to 1/2-inch thickness.
  3. Season both sides of the chicken with salt and pepper.
  4. Dust the chicken evenly with flour.
  5. Dip the floured chicken into the beaten eggs.
  6. Press the chicken firmly into a mixture of panko and parmesan.
  7. Let the breaded chicken rest for 15 minutes before cooking.
  8. Heat olive oil in a skillet over medium-high heat.
  9. Fry the chicken in batches for 2 minutes per side until golden brown.
  10. Transfer chicken to a baking dish.
  11. Top each breast with tomato sauce, mozzarella, and provolone.
  12. Bake in the preheated oven for 5-7 minutes until the cheese is melted and bubbling.
  13. Garnish with fresh basil before serving.

Notes

Pounding the chicken to an even thickness ensures consistent cooking without drying out the edges. Resting the breaded chicken for 15 minutes helps the coating adhere better during frying. You can substitute panko with standard breadcrumbs if desired.
