Ingredients
  

  • 2 large chicken breasts, skinless and boneless
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon garlic powder (or fresh garlic paste)
  • 1 teaspoon dried oregano (Mediterranean style)
  • 1 teaspoon dried thyme (or fresh thyme sprigs)
  • 1/2 teaspoon salt (adjust to taste)
  • 1/2 teaspoon freshly ground black pepper
  • 4 large whole wheat or gluten-free flour tortillas
  • 2 cups chopped romaine lettuce (or baby arugula/spinach)
  • 1/3 cup Caesar dressing, store-bought or homemade
  • 1/2 cup grated Parmesan cheese (or vegan cheese for dairy-free)
  • 1 cup gluten-free croutons

Method
 

  1. Whisk olive oil, lemon juice, garlic powder, oregano, thyme, salt, and pepper in a bowl
  2. Place chicken breasts in a resealable bag and pour the marinade over them
  3. Marinate for at least 20 minutes
  4. Preheat a grill pan to medium-high heat (400°F)
  5. Grill chicken for 5-7 minutes per side until crispy and fully cooked
  6. In a separate bowl, mix Caesar dressing with croutons and Paremesan cheese
  7. Warm tortillas in the oven (375°F for 15 minutes) or on a dry skillet
  8. Place grilled chicken on tortillas, top with romaine and Caesar mixture, then roll to serve

Notes

For gluten-free version, use certified gluten-free tortillas and croutons
Vegan alternative: Substitute chicken with grilled tofu and use nutritional yeast
Marinate up to 2 hours for deeper flavor
Avoid overcooking chicken to maintain juiciness
