- Heat olive oil in a skillet over medium heat.
- Add onion, jalapeño, salt, chili powder, and cumin; sauté for 3 minutes until softened.
- Stir in the shredded chicken, salsa, and lime juice; remove from heat and cool slightly.
- Warm the tortillas in the microwave for 1 minute wrapped in damp paper towels to prevent cracking.
- Place a spoonful of chicken mixture and a sprinkle of cheese in the center of each tortilla.
- Roll the tortillas tightly and place them seam-side-down in a pan with the heated vegetable oil.
- Fry until golden brown on all sides, ensuring they stay closed by keeping the seam side down initially.
Notes
Ensure tortillas are warm before rolling to prevent cracking. Placing the flautas seam-side-down in the pan eliminates the need for toothpicks. You can substitute Monterrey Jack with Pepper Jack for extra heat.
